Sales and Cooking Labor

Sales and Cooking Labor allows store managers to view, print, import, and manage various types of information to help to reduce the time spent gathering and calculating current and projected Sales, Labor Usage, and Beef Cooking for a site.

Store

ID and name of the site. This field not editable.

AM $/Roast to Use from 10:00 AM to 2:00 PM with Suggested $/Roast

Price of each roast in the morning for the time range 10:00 AM to 2:00 PM. Suggested value: 200.00

This field can not be edited if the site's current business time is past 2:00 PM.

Suggested $/Roast only displays the 1st time opening the page on a business day and Suggested $/Roast value is entered previously.

PM $/Roast to Use from 2:00 PM to 10:00 PM with Suggested $/Roast

Price of each roast in the afternoon for the time range 2:00 PM to 10:00 AM. Suggested value: 200.00

Suggested $/Roast only displays the 1st time opening the page on a business day and Suggested $/Roast value is entered previously.

Update

Updates the report using the price values entered in the AM $/Roast to Use from 10:00 AM to 2:00 PM and PM $/Roast to Use from 2:00 PM to 10:00 PM fields.

Projected Sales Table

This table shows a breakdown of the equation used to calculate the number of Roasts to be Tempered.

  • Projected Sales (4 days): the number of sales projected over 4 days. This value is fixed.

  • $/Roast: Dollar price of each roast.

  • Roast Needed for Tempering: Number of roasts needed. This value is fixed.

  • Roast Thawing: Number of roasts to be thawed.

  • Roasts Cook/Hold: Number of roasts to be cooked or prepared.

  • Roast to be Tempered: Total number of roasts needed.

Sales Cooking and Labor Table

This table shows the sales price and number of labor hours that are needed for the day according to the values entered in the fields on the page.

Full Screen/Regular View Button

Expands/collapses the Sales Cooking and Labor grid to fill the screen.

Import

Import sales and labor amounts.

Print

Prints the Sales and Cooking Labor table.

Refresh

Refresh the Sales Cooking and Labor details on the screen. Any unsaved changes are retained.

Save

Save the values entered in Sales and Cooking Labor page.

Count of Sales and Cooking Labor from the previous year.

Predicted price of a roast for the morning time range for the next day.

Amount of beef to temper for the morning time range.

Recalculate Sales Cooking and Labor

To adjust the values of Sales Cooking and Labor and recalculate the predicted sales and labor:

  1. In the AM $/Roast to Use from 10:00 AM to 2:00 PM and PM $/Roast to Use from 2:00 PM to 10:00 PM fields, enter the desired numeric value between 0.01 and 999.99.

  2. [Optional] From the Projected Sales (2 days) table, enter the desired numeric values.

  3. From under the Store field, select Update.

  4. From the Sales and Cooking Labor Table, enter the desired values in the editable fields as needed.

  5. From the left side Sales and Cooking Labor Table and to left of the Save button, select Refresh.

To make edits the Sales and Cooking Labor table and apply the changes to the current and projected Sales and Cooking Labor calculations:

  1. In the Sales and Cooking Labor Table, make the desired changes.

  2. From the right side of the Sales and Cooking Labor Table, select Save.

  3. From the right side of the Sales and Cooking Labor Table, select Refresh.

To manage full screen view of the Sales and Cooking Labor Table:

  1. From the right side of the Sales and Cooking Labor Table, select the outward facing arrow button.

  2. From the right side of the Sales and Cooking Labor Table, select the inward facing arrow button— or — press Esc on the keyboard.
